I am starting the raw food diet but want to make sushi how can I ?
Is there a way to soak the rice to make it soft enough to use? Please help as I need meat in my diet and though this would be a good way to do this as I do not mind cutitng out other meats.

Eat sashimi. By the way, rice is better for you after it’s cooked… way less starch.
I don’t think you can soften it enough at room temp. Some raw foodists will sprout grains including rice and eat them, but I think a good idea for sushi is to substitute something else for rice. Like grated, seedless cucumber, maybe? That’s good with fish and pickled ginger. Or something starchy and mild you can eat raw and shredded: jicama or Jerusalem artichoke maybe. Disclaimer: I cook much of my food, but find the raw food diet interesting and a good challenge for some meals. I like to think that if something is good enough for me to eat, I should be able to eat it raw, even if I choose not to.
