Some raw foodists will sprout grains including rice and eat them, but I think a good idea for sushi is to substitute something else for rice. Like grated, seedless cucumber, maybe? That&#039;s good with fish and pickled ginger. Or something starchy and mild you can eat raw and shredded: jicama or Jerusalem artichoke maybe. Disclaimer: I cook much of my food, but find the raw food diet interesting and a good challenge for some meals. I like to think that if something is good enough for me to eat, I should be able to eat it raw, even if I choose not to.</description>
