Well the basics is what your really want to keep and eye out for: Your protein intake, Carbohydrate intake, and fat intake. Also, make sure you are keeping on top of your calcium and metals. If you have access to regular doctor visits, make sure you get them; at least for the first part of going RAW.
One thing I would like to say is that your body needs A LOT LESS protein than most people think. And if you eat too much your body will actually "panic" and believe it is sick. All amino acids (what makes protein) and calcium can be found in DARK leafy greens (such as spinach and red leaf lettuce) – I make green smoothies (google it) every day.
A word of caution: Don’t over eat on nuts and sweet fruit (like apples). Eat 7-12 servings of veggies and non-sweet fruit (like cucumbers) a day… Eat only about 4 servings of fruit a day. And try to limit nuts to about a large handful a day – avocados are a good alternative for fat (your body has difficulty processing nuts).
And if you want to be able to keep on this RAW thing for a long time (or forever) you need to be creative and find creative raw food recipes. And also see if there are any good restaurants around you that sell raw dishes.
*Side note: I just got the movie "Simply Raw" it is an amazing documentary on reversing diabetes with a Raw food Diet. One thing to note though, is at the end of the movie. After the 30days of being 100% Raw the people at the clinic have the ex-diabetics transition to a diet that is MOSTLY raw but even give them some healthy cooked food recipes to use… Even the experts are having these people not stay on 100% – a little food for thought ;)
….
Most protein you can get through Dark Leafy Greens and nuts
Most calcium you can get through Dark Leafy Greens and some other sources
Most Fats you can get from Nuts and Avocados and some other sources
And for the carbs – veggies are carbs (though you may want to supplement with some cooked items like rice and potatoes; if your not 100%)
Mushrooms are a good items for your metals as well as many other veggies

O, and make sure you drink enough water. Many people think that because they are eating juicy food they don’t need water – not true! The fiber in all the food you will be eating will use a lot of water. So drink up!
